Ingredients

oz frozen spinach |

eggs |

cup soy milk |

oz feta cheese |

cup chopped onions |
| 1/2 |
tablespoon olive oil |
Directions
- # chop onions, cook in a skillet on medium heat in olive oil until soft and starting to brown.
- # add spinach and cook until defrosted.
- # add 3 chopped chicken sausages, mix well.
- # in a separate bowl, whisk eggs and soy milk, add feta and pour evenly over spinach onion sausage mixture.
- # cook for about 5-10 minutes unitl bottom seems to have set.
- # transfer to the oven and broil for approximately 5-10 minutes, watching closely and cooking until brown.
- # done!
