fritatta base (minus sausage, seperate entry)

Makes 8 servings

the correct portioned recipe

Ingredients
8 oz frozen spinach
6 eggs
1/2 cup soy milk
3 oz feta cheese
1 cup chopped onions
1/2 tablespoon olive oil
Directions
  1. # chop onions, cook in a skillet on medium heat in olive oil until soft and starting to brown.

  2. # add spinach and cook until defrosted.

  3. # add 3 chopped chicken sausages, mix well.

  4. # in a separate bowl, whisk eggs and soy milk, add feta and pour evenly over spinach onion sausage mixture.

  5. # cook for about 5-10 minutes unitl bottom seems to have set.

  6. # transfer to the oven and broil for approximately 5-10 minutes, watching closely and cooking until brown.

  7. # done!
