| 2 | large red pepper |
| 1/2 | large onion |
| 6 | medium mushrooms |
| 2 | cup |
| 2 | cup spinach |
| 1 | tbsp extra virgin olive oil |
- Heat pan on med high with oil. Give it a minute, then add diced onion and mushrooms.
- Once slightly browned, add sliced pepper. Once everything has carmelized, add spinach. and beans. Turn off heat once the spinach begins to wilt -- you don't want to kill it completely! : )
- Enjoy inside your favorite tortillas (I adore spinach 90 cal flatouts!) or on top of a salad with some greek yogurt and cheese, some salsa....my favorite!
