Bean Fajita Filling Recipe

Absolutly delicious : )

Ingredients
2 large red pepper
1/2 large onion
6 medium mushrooms
2 cup
2 cup spinach
1 tbsp extra virgin olive oil
Directions
  1. Heat pan on med high with oil. Give it a minute, then add diced onion and mushrooms.

  2. Once slightly browned, add sliced pepper. Once everything has carmelized, add spinach. and beans. Turn off heat once the spinach begins to wilt -- you don't want to kill it completely! : )

  3. Enjoy inside your favorite tortillas (I adore spinach 90 cal flatouts!) or on top of a salad with some greek yogurt and cheese, some salsa....my favorite!
