6 loaves banana bread. The riper the bananas the better!
| 18 | Bananas |
| 4 | c. sugar |
| 3 | c. margarine |
| 12 | eggs |
| 12 | c. flour |
| 1 | tbsp. salt |
| 1 | tbsp. baking soda |
| 2 | tbsp. baking powder |
| 1 | c. chopped pecans |
- Cream sugar, margarine, salt, soda and baking powder.
- Add eggs one at a time. Scrape bowl and mix until fluffy.
- Add mashed bananas.
- Add Flour.
- Add nuts.
- Mix well.
- Spray and flour 6 loaf pans.
- Bake 350 for 1 - 1 1/2 hours or until toothpick inserted in the middle comes out clean. Cool in pans for 15 minutes.
- Turn out out on cooling rack - wrap with saran when cool.
- These freeze very well.
- Can also use this recipe for banana muffins.
