Banana Bread - 6 Loaves Recipe

Makes 48 servings


6 loaves banana bread. The riper the bananas the better!

Ingredients
18 Bananas
4 c. sugar
3 c. margarine
12 eggs
12 c. flour
1 tbsp. salt
1 tbsp. baking soda
2 tbsp. baking powder
1 c. chopped pecans
Directions
  1. Cream sugar, margarine, salt, soda and baking powder.

  2. Add eggs one at a time. Scrape bowl and mix until fluffy.

  3. Add mashed bananas.

  4. Add Flour.

  5. Add nuts.

  6. Mix well.

  7. Spray and flour 6 loaf pans.

  8. Bake 350 for 1 - 1 1/2 hours or until toothpick inserted in the middle comes out clean. Cool in pans for 15 minutes.

  9. Turn out out on cooling rack - wrap with saran when cool.

  10. These freeze very well.

  11. Can also use this recipe for banana muffins.
