| 1 | ounce graham crackers (or Amaretti cookies) |
| 2 | nectarines, halves and pitted |
| 2 | teaspoons sugar |
| 2 | teaspoons unsalted butter |
- Preheat oven to 375 degrees F. Spray bottom of 8" baking dish with cooking spray and set aside.
- Using a melon baller, clean out the red flesh from the center of each nectarine. Arrange fruit cut side up in the prepared dish. In a food processor, add graham crackers (or cookies) and pulse until finely crumbled. Fill center of each fruit with crumbs. Sprinkle 1/2 teaspoon of sugar over each. Dot each with 1/2 teaspoon of butter.
- Bake until fruit is tender and filling is crisp, about 30 minutes. Serve warm with whipped cream or ice cream.
