Stuffed Nectarines Recipe

Ingredients
1 ounce graham crackers (or Amaretti cookies)
2 nectarines, halves and pitted
2 teaspoons sugar
2 teaspoons unsalted butter
Directions
  1. Preheat oven to 375 degrees F. Spray bottom of 8" baking dish with cooking spray and set aside.

  2. Using a melon baller, clean out the red flesh from the center of each nectarine. Arrange fruit cut side up in the prepared dish. In a food processor, add graham crackers (or cookies) and pulse until finely crumbled. Fill center of each fruit with crumbs. Sprinkle 1/2 teaspoon of sugar over each. Dot each with 1/2 teaspoon of butter.

  3. Bake until fruit is tender and filling is crisp, about 30 minutes. Serve warm with whipped cream or ice cream.
