A treat for those of use who love Strawberry-Rhubarb pie but don't want the extra calories.
| 1 | lb rhubarb, thinly sliced |
| 1 | pint strawberries, heaping, hulled and halved |
| 1 | cup sugar |
- Mix rhubarb and sugar. Let sit at least one hour.
- Bring rhubarb-sugar mixture to a gentle boil. Reduce heat, cover, and simmer 10-15 minutes, until rhubarb is tender.
- Put strawberries in a food processor or blender. Add rhubarb mixture. Process until the mixture is a smooth puree. Pour into a bowl and chill thoroughly.
- Process fruit mixture in an ice-cream maker according to the manufacturer's directions.
