Chocolate Mascarpone Muffins Recipe

Ingredients

Fudge:
1 cup water
5 oz unsweetened chocolate
1/3 cup mascarpone cheese

Dry Ingredients:
3 cups flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
3/4 cups chocolate chips, semi-sweet

Wet Ingredients:
2 1/4 cups granulated sugar
1 tbsp vanilla extract
1 cup vegetable oil
3 eggs

Ganache:
2/3 cup heavy cream
1/2 tbsp vanilla extract
1 cup chocolate chips
Directions
  1. Boil the water, add the unsweetened chocolate and mix until melted. Add the cheese, mix well, and let it cool.

  2. Mixed al the dry ingredients in a bowl

  3. With a hand mixer, mix all the wet ingredients in another bowl.

  4. Add the fudge to the wet ingredients and mix

  5. Add the dry ingredients in three time and mix manually.

  6. Fill the cup cakes u to the ¾ part of the baking cup.

  7. Cook at 350º for 25 minutes

  8. Let them cool for one hour

  9. For the ganache, heat the cream and the vanilla until it starts to boil. Add the chocolate chips and mix until melted.

  10. Dip the cup cakes in the ganache
