Ingredients

cup mung beans |
| 1 |
cup brown rice, cooked |
| 1 |
tsp cumin, ground |
| 15 |
peppercorns, black |
| 1/4 |
tsp mustard seeds |
| 1 |
tsp turmeric |
| 1/2 |
tsp garam masala |
| 1/4 |
tsp cardamom, ground |
| 1 |
cup leeks, finely chopped and rinsed |
| 1 |
tbsp oil, safflower |
| 4 |
cups water |
| 1/2 |
tsp sea salt |
Directions
- Boil mung beans in water until soft, about 30-45 minutes, rinse
- Cook brown rice in rice cooker, about 40 minutes.
- Saute leeks in oil until brightly coloured, add spices and cook until well blended.
- Add mung beans, brown rice and water. Simmer about 20 minutes.
- Serve with a dollop of yoghurt and tamari.
