Makes 4 servings

delicious hippie food, very easy to digest

Ingredients
1 cup mung beans
1 cup brown rice, cooked
1 tsp cumin, ground
15 peppercorns, black
1/4 tsp mustard seeds
1 tsp turmeric
1/2 tsp garam masala
1/4 tsp cardamom, ground
1 cup leeks, finely chopped and rinsed
1 tbsp oil, safflower
4 cups water
1/2 tsp sea salt
Directions
  1. Boil mung beans in water until soft, about 30-45 minutes, rinse

  2. Cook brown rice in rice cooker, about 40 minutes.

  3. Saute leeks in oil until brightly coloured, add spices and cook until well blended.

  4. Add mung beans, brown rice and water. Simmer about 20 minutes.

  5. Serve with a dollop of yoghurt and tamari.
