Tamale Pie, Veggie Style Recipe

Ingredients
16 oz refried beans
1/4 cup black olives
1/4 cup frozen corn
1/4 cup white onion, chopped
3 corn tortillas
1 cup sour cream
1 cup cup salsa
1 cup mexican four cheese blend, shredded
1 cup morningstar grillers crumbles
3/4 oz taco seasoning
Directions
  1. preheat oven to 375 degrees F.

  2. Saute morningstar crumbles until warm and soft, then add taco seasoning (prepare as directed on taco seasoning package). (usually we do this as leftovers from taco night, so the taco crumbles are reserved & refrigerated. warm is fine too, though.)

  3. heat refried beans in microwave safe container, microwaving 1-2 minutes or until spreadable.

  4. microwave corn kernels in microwave safe container until thawed. drain any excess liquid.

  5. drain all liquid from olives.

  6. heat corn tortillas over gas flame or in pan over medium-high heat until they brown and crisp up slightly. (this prevents sogginess in the final dish.)

  7. layer ingredients into round 7 to 8 inch ceramic casserole as follows:

  8. 1/2 of beans

  9. 1/8 cup corn

  10. 1/8 cup olives

  11. 1/8 cup onions

  12. 1/2 cup taco-flavored veggie crumbles

  13. 1/4 cup cheese

  14. 1 tortilla

  15. 1/2 cup sour cream

  16. 1/2 cup salsa

  17. 1/4 cup cheese

  18. 1 tortilla

  19. repeat twice (omitting top tortilla). garnish with a few leftover olives and corn kernels.

  20. cover with aluminum foil and bake for 20 minutes. remove foil and continue baking another 10-15 minutes, or until cheese is melted and browns slightly. (this blend of cheese won't melt completely, but it will get warm, slightly gooey, and brown wonderfully.)

  21. serve with guacamole, and possibly some extra sour cream and/or salsa.
