- Place the flours and the salt in a bowl. drizzle 1 tablespoon of oil over the flour, add the tepid water and mix to form a soft dough. adding a little more water,if necessary. Knead on a lightly floured surface until smooth, then cover and leave for 30 minutes.
- knead the dough on a floured surface and divide into 6 equal pieces. Shape each one into a ball. Roll out on a floured surface to 15 cm/6 inch round and brush very lightly with oil.
- Fold in half and half again to form a triangle. Roll out to form an 18 cm/7 inch triangle (when measured from point to centre top), dusting with extra flour as necessary.
- Brush a large heavy based frying pan with a little oil and heat until hot, then add one or two parathas and cook for about 1-1 1/2 minutes. Brush the surfaces very lightly with oil and then turn and cook the other sides for 1 1/2 minutes until completely cooked through.
- Place the cooked parathas on a plate and cover with foil, or place between the folds of a clean tea towel to keep them warm, while you are cooking the remainder in the same way, greasing the pan between cooking each batch.
