Chickpeas and tomatoes

Makes 8 servings

Summery Mediterranean dish

Ingredients
14 oz tomatoes, crushed
14 oz tomatoes, stewed
1 cup tomatoes, chopped
2 cups onions, chopped
4 cups spinach, chopped
1/4 cup basil
2 cups chickpeas
2 cloves garlic, diced
3 T lemon juice
Directions
  1. Saute onions and garlic till tender.

  2. Add tomatoes, spinach, basil, chickpeas, cover and simmer for 30 minutes.

  3. Add lemon juice and salt, pepper as desired. Serve.
