No grill and no waiting to marinate or bake. This is quick, easy and mouthwatering.
| 2 | pounds chicken tenders |
| 4 | cups Barbecue Sauce |
| 1 | onion |
| 7 | Kaiser Rolls |
- Chop onion.
- Coat large skillet with a little veg oil and heat up until oil shimmers.
- Cook the chicken tenders until golden brown but still tender on the inside (about 4 minutes each side). Then Transfer to cutting board.
- Add onions and a little water to the skillet. Saute onions for 1 minute while scraping browned pan bits. Pour in BBQ Sauce, turn heat to low and let simmer for 1-3 minutes.
- Cube the warm chicken and put into the pan. Use a potato masher (be careful as it slides easily) to "shred" the chicken. May need to do this for about 5 minutes.
- Simmer another 5 minutes, adding a little water or more BBQ sauce if it gets too thick.
- Serve on a fresh Kaiser Roll with a side of cole slaw.
