this is totally freshly made at home. Spelt berries ground at home Milk can be any type (I have used buttermilk or skim both do well) honey in unpasturized baking powder is aluminum free flax is organic golden flax that I grind just before putting it into mix. almonds are slightly toasted. I only use extra virgin greek olive oil
| 2 1/4 | cups Spelt flour |
| 1 1/4 | cups milk |
| 1/4 | cup honey |
| 3 | eggs, beaten |
| 1 | tablespoon baking powder |
| 1 | tablespoon extra virgin olive oil |
| 1/2 | teaspoon salt |
| 2 | tbs of ground flaxseed |
| 1/4 | cup of chopped almonds |
Combine all dry ingredients. Add milk, eggs, and oil. Mix. Fill muffin cups, greased or papered. Bake for about 17 minutes, or until browned in a 375 degree oven.Categories
