Vegetable Yogurt Curry Recipe

Ingredients
1 tbsp vegetable oil
1 large red onion
1 large tomato
1 large potato
1/2 green bell pepper
20 green beans
1 tsp ginger
1 tsp garlic
1 tsp cumin seed
1 tbsp cumin powder
1 1/2 tbsp coriander
1/2 tsp red chili powder
1/2 tsp turmeric
1 tbsp garam masala
1 cup nonfat yogurt
Directions
  1. • Cut and boil French beans until soft with some salt in the boiling water for taste.

  2. • Bake potato until cooked.

  3. • Heat some oil in pan and add some cumin seeds and ginger garlic paste. When the seeds turn brown add the sliced onions and finely chopped green pepper.

  4. • Fry onions and green pepper until brown. Add the cumin powder, coriander powder, turmeric and red chili powder and fry for a min and a half.

  5. • Add the baked and cubed potatoes and the French beans and continue to fry for a couple min with constant stirring. Add some salt to taste.

  6. • Add the tomatoes and continue to cook for 5-8 min or until the tomatoes become watery.

  7. • Beat the yogurt till smooth consistency.

  8. • Add the yogurt to the curry and cook for 4-5 min in low flame.

  9. • Complete the dish by adding some salt as required, garam masala powder and some coriander to garnish.

  10. • Serve hot with some tortilla.
