Applesauce Apple Muffins Recipe

Makes 16 servings


These are good for a low calorie snack. Best with preserves. Adapted from volumetrics.

Ingredients
1 3/4 cups flour, all purpose
3/4 cup dark brown sugar
1/2 cup flour, whole wheat
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
1 1/4 cups buttermilk, low fat
1 1/4 cups applesauce, unsweetened
1 egg
1 tsp canola oil
1 tsp vanilla extract
1 cup apples, chopped
Directions
  1. dice apples, set aside.

  2. Mix dry ingredients in large bowl.

  3. Mix wet ingrdients in separate bowl.

  4. In third bowl, coat apples in 1/4 cup of dry mix.

  5. Fold wet mix into dry, then fold apples into first mixture.

  6. Divide mix into 16 muffin cups.

  7. Bake at 400 degrees for 20 minutes.
