These are good for a low calorie snack. Best with preserves. Adapted from volumetrics.
| 1 3/4 | cups flour, all purpose |
| 3/4 | cup dark brown sugar |
| 1/2 | cup flour, whole wheat |
| 2 | tsp baking powder |
| 1 | tsp baking soda |
| 1/4 | tsp salt |
| 1/4 | tsp nutmeg |
| 1 | tsp cinnamon |
| 1 1/4 | cups buttermilk, low fat |
| 1 1/4 | cups applesauce, unsweetened |
| 1 | egg |
| 1 | tsp canola oil |
| 1 | tsp vanilla extract |
| 1 | cup apples, chopped |
- dice apples, set aside.
- Mix dry ingredients in large bowl.
- Mix wet ingrdients in separate bowl.
- In third bowl, coat apples in 1/4 cup of dry mix.
- Fold wet mix into dry, then fold apples into first mixture.
- Divide mix into 16 muffin cups.
- Bake at 400 degrees for 20 minutes.
