Salmon Cakes Recipe

Delicious, flavorful salmon patties that can be served over rice, salad, or my favorite, couscous. Canned salmon (pre-cooked) is intended to be used in this recipe, although fresh salmon can be prepared instead if you so choose.

Ingredients

Ingredients:
418 grams sockeye salmon, (canned) bones and skin separated
2 egg whites or 1 egg
2 tablespoon Original Vegenaise
1/2 cup sweet onions, diced
1 tablespoon parsley
1 tablespoon garlic powder
1/2 tablespoon onion salt
1/2 cup breadcrumbs
2 tablespoons olive oil
Directions
  1. Combine eggs, Vegenaise, parsley, garlic powder, and onion salt until consistent

  2. Add breadcrumbs and fold until they soak up the mixture

  3. Stir in salmon, and onions

  4. Make equal balls of mixture, and sauté in pan with olive oil until browned
