Pumpkin Fiber Bars Recipe

yummy high fiber low calorie dessert!

Ingredients
2 cups fiber one cereal
1 cup of canned pears
15 oz pumpkin
2 eggs
1 1/2 cups flour
1 1/2 cups splenda
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp salt
Directions
  1. Heat oven to 350°F. Spray, or grease and flour 13x9x2-inch pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).

  2. In large bowl, beat pears, pumpkin and eggs on low speed with electric mixer until well blended. Stir in cereal; let stand 10 minutes.

  3. Beat in remaining bar ingredients on low speed until well blended. Spread evenly in pan.

  4. Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.
