yummy high fiber low calorie dessert!
| 2 | cups fiber one cereal |
| 1 | cup of canned pears |
| 15 | oz pumpkin |
| 2 | eggs |
| 1 1/2 | cups flour |
| 1 1/2 | cups splenda |
| 2 | tsp baking powder |
| 1 | tsp baking soda |
| 1 | tsp ground cinnamon |
| 1/2 | tsp ground ginger |
| 1/4 | tsp salt |
- Heat oven to 350°F. Spray, or grease and flour 13x9x2-inch pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
- In large bowl, beat pears, pumpkin and eggs on low speed with electric mixer until well blended. Stir in cereal; let stand 10 minutes.
- Beat in remaining bar ingredients on low speed until well blended. Spread evenly in pan.
- Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.
