Sweet & Sour Beef Briskit

Makes 8 servings

Do this in the oven for a nice creamy gravy.

Ingredients
2 lb beef brisket, upper portion
1 T Salt
1/8 cup Vegetable oil
1/2 pound carrots, peeled and cut into 2-inch pieces
4 stalks celery, cut into big chunks
3 medium onions, peeled and cut into eights
6 cloves garlic, peeled and lightly smashed
26 ounce whole tomatoes
1/3 cup light brown sugar
1 cup chicken stock
2 tablespoons red wine vinegar or apple cider vinegar
Directions
  1. Seer the meat.

  2. Lightly cook veggies in pan drippings, then pour over the beef in a shallow cooking dish.

  3. Combine remaining ingrediants, and warm in pan to pick up remaining flavors from beef and veggies. Then pour over meat and veggies.

  4. Lightly cover with foil, keeping sides vented for steam.

  5. Cook in 200 degree oven for 6-8 hours.
