Simple breakfast of grits with two fried eggs.
| 1 | cup water |
| 1/4 | cup grits |
| 1/2 | tbsp butter |
| 2 | eggs |
| 1/4 | tsp salt |
- Place medium-sized skillet over medium-high heat.
- Add water to small pot and bring to a boil.
- Add grits and salt to boiling water and lower to a simmer. Cover. Cook for 5 minutes or until desired consistency, stirring occasionally.
- Add butter to skillet and allow to melt.
- Crack eggs into skillet and cook until partially solid.
- Flip eggs and cook for a short time until whites are solid but yolk remains fluid.
- Remove eggs to a plate.
- Cover eggs with cooked grits. Mix eggs and grits together with fork.
