Grits with Eggs Recipe

Makes 1 serving


Simple breakfast of grits with two fried eggs.

Ingredients
1 cup water
1/4 cup grits
1/2 tbsp butter
2 eggs
1/4 tsp salt
Directions
  1. Place medium-sized skillet over medium-high heat.

  2. Add water to small pot and bring to a boil.

  3. Add grits and salt to boiling water and lower to a simmer. Cover. Cook for 5 minutes or until desired consistency, stirring occasionally.

  4. Add butter to skillet and allow to melt.

  5. Crack eggs into skillet and cook until partially solid.

  6. Flip eggs and cook for a short time until whites are solid but yolk remains fluid.

  7. Remove eggs to a plate.

  8. Cover eggs with cooked grits. Mix eggs and grits together with fork.
