Split Pea Soup. I like to add 14 oz of butterball smoked turkey sausage to this. That adds an additional 135 calories to each serving.
| 1 | lb. split peas, dried |
| 64 | oz. chicken broth, low sodium |
| 2 | medium carrots, diced |
| 2 | celery stalks, diced |
| 2 | medium potatoes, peeled and diced |
- Combine all ingredients in large stock pot and cover.
- Slowly bring to a simmer and then cook for 30-45 minutes or until split peas are soft.
