Breakfast Tostada

Makes 1 serving

tasty and filling

Ingredients
1/4 cup egg beaters
1 dash salt
1 dash pepper
1 tablespoon soy milk
1 Tortilla, 7" Corn
1 tablespoon red onion, chopped
1/4 cup black beans
2 tablespoons reduced fat cheddar cheese
1 tablespoon salsa
1 tablespoon reduced fat sour cream
Directions
  1. Spray microwave-safe bowl with non-fat cooking spray. Add egg beaters, milk, salt and pepper. Stir together, then microwave on high for 1 minute.

  2. Place corn tortilla on small plate. Place cooked eggs on tortilla. Break up with fork.

  3. Top egg with chopped red onion, cheddar cheese and black beans. Microwave on high for 45 seconds.

  4. Top with salsa and sour cream.
