Ingredients

cup egg beaters |

dash salt |

dash pepper |

tablespoon soy milk |

Tortilla, 7" Corn |
| 1 |
tablespoon red onion, chopped |
| 1/4 |
cup black beans |
| 2 |
tablespoons reduced fat cheddar cheese |
| 1 |
tablespoon salsa |
| 1 |
tablespoon reduced fat sour cream |
Directions
- Spray microwave-safe bowl with non-fat cooking spray. Add egg beaters, milk, salt and pepper. Stir together, then microwave on high for 1 minute.
- Place corn tortilla on small plate. Place cooked eggs on tortilla. Break up with fork.
- Top egg with chopped red onion, cheddar cheese and black beans. Microwave on high for 45 seconds.
- Top with salsa and sour cream.
