Ingredients
| 1 |
lb. large shrimp, raw, peeled and deveined |
| 1 |
teaspoon salt |
| 1 |
teaspoon red pepper flakes |
| 1 |
tablespoon olive oil |
| 2 |
teaspoons olive oil |
| 1 |
medium sweet onion, sliced |
| 14 1/2 |
ounce diced tomatoes |
| 1 |
cup dry white wine |
| 3 |
garlic cloves, chopped |
| 1/4 |
teaspoon dried oregano |
| 3 |
tablespoons fresh parsley |
| 3 |
tablespoons fresh basil |
Directions
- Toss shrimp in a bowl with salt and red pepper flakes.
- Heat 1 tablespoon olive oil in a large, non-stick skillet. Add the shrimp and saute until just cooked through (3-5 minutes). Transfer shrimp to a bowl or plate.
- Add 2 teaspoons oil to skillet; saute onion until translucent (3-5 minutes).
- Add tomatoes, garlic, wine, and oregano. Simmer until slightly thickened (10-15 minutes).
- Return shrimp (and juices) to the tomato mixture. Stir to coat; simmer until shrimp is heated through (1-2 minutes).
- Stir in parsley and basil. Server over brown rice or fettucine.
