Shrimp Fra Diavolo

Makes 4 servings

Very tasty (and spicy)

Ingredients
1 lb. large shrimp, raw, peeled and deveined
1 teaspoon salt
1 teaspoon red pepper flakes
1 tablespoon olive oil
2 teaspoons olive oil
1 medium sweet onion, sliced
14 1/2 ounce diced tomatoes
1 cup dry white wine
3 garlic cloves, chopped
1/4 teaspoon dried oregano
3 tablespoons fresh parsley
3 tablespoons fresh basil
Directions
  1. Toss shrimp in a bowl with salt and red pepper flakes.

  2. Heat 1 tablespoon olive oil in a large, non-stick skillet. Add the shrimp and saute until just cooked through (3-5 minutes). Transfer shrimp to a bowl or plate.

  3. Add 2 teaspoons oil to skillet; saute onion until translucent (3-5 minutes).

  4. Add tomatoes, garlic, wine, and oregano. Simmer until slightly thickened (10-15 minutes).

  5. Return shrimp (and juices) to the tomato mixture. Stir to coat; simmer until shrimp is heated through (1-2 minutes).

  6. Stir in parsley and basil. Server over brown rice or fettucine.
