| 4 | tbs olive oil |
- Thinly slice potatoes and set to boil
- Slice onion and peppers length ways and sautee in olive oil
- Cut sausage on a bias and toss in with onion and peppers.
- When potatoes are cooked mix in with peppers, onions and sausage. Stir until thoroughly mixed.
