Great Pasta for a hot summer day
| 16 | oz whole wheat pasta |
| 2 | tbs olive oil |
| 1 | tbs olive oil |
| 1 | tbs butter |
| 2 | tbs red onion |
| 15 | spears asparagus |
| 1 | small zucchini |
| 1 | cup peas |
| 5 | oz black olives |
| 8 | oz smoked salmon |
| 1 | tbs fresh tarragon |
| 3/4 | red onion |
| 3/4 | cup tomato |
| 1 | cup low sodium chicken broth |
| 2 | cups heavy cream |
| 2 | tbs lime juice |
- Put water with about 1 TB salt on to boil for pasta. Meanwhile, prep
- remaining ingredients. When water is boiling, boil pasta per package
- directions til just done. Drain into a colander, put back in cooking
- pot, drizzle in a few tablespoons of olive oil and toss to coat so
- pasta doesn't clump up. Cover to keep warm.
- Heat oil and butter in a frying pan. Saute red onion til barely
- soft, stirring. Add asparagus, saute until barely cooked through,
- stirring. Add zucchini, cook briefly til barely done. Add contents
- of frying pan to pasta, toss to mix through, cover quickly to keep warm.
- While frying pan is still hot, pour chicken broth in and boil til
- reduced by half, stirring to pick up any residue in pan. Add heavy
- cream and boil intensely til thickened (should coat a spoon) and stir
- to keep from boiling over. Add lime juice and zest and warm
- through. Add pepper to sauce.
- Add contents of bowl (smoked salmon etc.-tomato) to pasta pot and
- pour sauce over the whole deal, scraping extra sauce out of the
- frying pan. Using a tongs, toss pasta together to mix all
- ingredients through.
