My favorite cold tabouli salad recipe.
| 2 | cups bulgur, dry |
| 1 | cup tomato |
| 1 | cup cucumber |
| 1 | cup red onion |
| 1 | cup parsley |
| 2 | tbsp olive oil |
| 1/4 | cup lemon juice |
| 1 | tsp salt |
- boil 4 cups of water and then add the bulgar, reduce heat and mix well. Let sit.
- Finely chop parsley, dice the other vegetables, mix together with olive oil, lemon juice and salt.
- Fluff bulgar with fork, mix in vegetable mix. Refrigerate and serve cold.
