This is an experiment. There may be too much liquid. Actually using dried mushrooms this time rather than fresh. I'd use more potatoes in the pot if I had them...
| 2 | lb beef, boneless ribs |
| 1 | tsp chili powder |
| 1 | tsp cumin |
| 1/2 | tsp salt |
| 1 | tsp pepper |
| 1 | cup scallions, sliced |
| 1 | cup carrot, chopped |
| 3 | cloves garlic, minced |
| 1 | potato, red large diced |
| 8 | oz mushrooms |
| 14 | oz stewed tomatoes |
| 10 | oz tomatoes, Rotel original |
| 1 | cup red wine, (cooking wine) |
| 1 | cup beef broth |
- Combine chili powder, cumin, salt & pepper (mor e or less to taste) and rub mixture over ribs.
- Place ribs in bottom of slow cooker.
- Add all other ingredients,
- stir everything but the beef.
- Cook overnight 8-9 hours.
