Coconut loaf cake with coconut icing

| 3 | tsp baking powder |
| 50 | grams |
| 175 | grams |

| 75 | grams |
- cream sugar and butter
- add eggs and flour and combine until smooth
- stir in dessicated cocount and 3 tbsps of the coconut milk
- pour into a greased/lined loaf tin and bake gas 4/180c for 45 minutes to 1 hour until a skewer comes out clean
- mix icing sugar with enough of remaining coconut milk (approx 4 tbsps?) to make icing and then smooth onto top of cooled cake. Leave to set
- serve & enjoy
