Substitute Fiber-One For All-Bran Cereal (Same Kcals) Recipe

Inspired by the Kellogg's All-Bran Muffins (Classic) Recipe!

Ingredients
1 1/4 cups all-purpose flour
1/2 cup splenda
1 tablespoon baking powder
1/4 teaspoon salt
2 cups Fiber One Cereal
1 1/4 cups unsweetened almond milk
1/4 cup egg beaters
1/8 cup sugar-free maple syrup
1/8 cup unsweetened apple sauce
Directions
  1. Stir together flour, sugar sub, baking powder and salt.

  2. Set aside.

  3. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk.

  4. Let stand about 2 minutes or until cereal softens.

  5. Add egg beaters, maple syrup, and applesauce.

  6. Beat well.

  7. Add flour mixture, stirring only until combined.

  8. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.

  9. Bake at 400° F about 20 minutes or until golden brown. Serve warm.
