Chicken, Rice & Vegetable Medley Recipe

Makes 4 servings


from an American Diabetes chicken rice, and broccoli recipe

Ingredients
2 tbs olive oil
16 ounce frozen stir fry vegetables
2 cups broccoli florets
10 1/2 ounce cream of chicken soup
16 ounce boneless, skinless, chicken breast fillets
1 1/2 cups water
Directions
  1. cook rice per package instructions until almost done

  2. heat oil in skillet

  3. cook chicken breast 4 minutes per side, remove and set aside

  4. add cream of chicken soup

  5. add water

  6. stir and bring to a boil

  7. add vegetables except rice to boiling mixture

  8. simmer approximately 2 minutes

  9. add partially cooked rice

  10. simmer until rice is completely cooked, about 5 minutes

  11. cube chicken
