Pasta with Chicken
| 1 | lbs. whole wheat pasta |
| 8 | ounces chicken breast |
| 4 | cups chicken broth |
| 2 | ounces virgin olive oil |
| 8 | ounces artichoke hearts |
- Fry chicken and artichoke hearts with olive oil
- Boil the pasta
- Prepare the chicken broth from fresh chicken parts (bones, skin, 2 cups water, cook about 15 mins.) add seasoning (garlic and onion powder, basil, salt and pepper) to taste, strain out the parts, add corn starch (1 ½ tsps. to 1 cup water, stir into to broth until thicken.
- Combine broth and pasta with chicken and artichokes, cook all about 10 mins. more.
- Serve with a sprinkle of Pecorino Romano Cheese.
