Salmon salad

Makes 2 1/2 servings

Think tuna salad, but with salmon. : ) Great as an open face sandwich with some provolone on top and a salad! yum : )

Ingredients
7 oz pink salmon
3 tbsp
3 large eggs
1 tbsp lemon juice
Directions
  1. Hard boil the eggs. While they boil, combine lemon juice, salmon and mayo. Season with dill or pepper, as much as needed for personal preference.

  2. Slice up the eggs and throw them in! I personally love this on some whole wheat toast, toasted with a slice of provolone on top...yummy! To reduce calories, use fat free mayo. We were out, and I was forced to use light.
