Think tuna salad, but with salmon. : ) Great as an open face sandwich with some provolone on top and a salad! yum : )

Ingredients

oz pink salmon |

tbsp lemon juice |
Directions
- Hard boil the eggs. While they boil, combine lemon juice, salmon and mayo. Season with dill or pepper, as much as needed for personal preference.
- Slice up the eggs and throw them in! I personally love this on some whole wheat toast, toasted with a slice of provolone on top...yummy! To reduce calories, use fat free mayo. We were out, and I was forced to use light.
