Spicy Fish Stew Ala Sicilian Stew From Essex, Ma Recipe

Makes 16 servings


Spicy red stew with lots of fish/seafood

Ingredients
56 oz diced tomato
3 cloves garlic
28 oz diced tomato with jalapeno
13 oz bay scallops
3 oz mussels
7/10 lb catfish
16 oz shrimp
3 oz clams
4 oz carrot
5 oz green pepper
5 oz red pepper
1 large onion
1 t bay leaf
3 oz red wine (denatured during cooking)
Directions
  1. Sweat Onions, peppers, carrots, and garlic with a quick spray of Pam

  2. Add tomato's & juice from cans & bay leaf

  3. Bring up to temp & simmer with red wine for 10 minutes

  4. Add fish/shell fish in layers into a much larger pot, starting with a layer of "tomato sauce"

  5. First Flat fishes

  6. Second shrimp and scallops

  7. Third mussels & clams on top

  8. Between each layer of fish/shellfish add tomato "sauce" from above & wait to get up to boiling temp

  9. Cover & simmer without stirring

  10. Done in 10-15 minutes as soon as muscles/clams open up

  11. Serve with bread, rice, or pasta (or no carb's if that is your thing)

  12. Black Pepper and other "Italian" herbs (oregano, basil, a smidge of rosemary) can be added to taste prior to fish

  13. THIS IS AN ESTIMATED RECIPE - I AM MAKING THIS TONIGHT AND WILL TRY TO EDIT AFTERWARDS

  14. Recipe needs tweeking - less tomato pieces - more "sauce" (puree?), more flat fish pieces, more spice & zing (add red pepper flakes, more wine, celery if time allows, more black pepper?)

  15. Serving is roughly 1.5 c
