Banana Bread Recipe

Makes 8 servings


Tasty banana bread, for using up old bananas, or having an almost guilt-free treat.

Ingredients
2 tbspn margarine
1 tbspn milk
2 medium bananas
1 whole egg
1 1/2 cup brown flour
1/2 tsp bicarbonate of soda
1/2 cup caster sugar
1/4 tsp salt
Directions
  1. Set oven to 160 deg, gas mark 5.

  2. Melt margarine and add to a large mixing bowl.

  3. Mash the bananas until smooth.

  4. Add milk, mashed bananas, egg and optional walnuts.

  5. Mix together thoroughly, it's ok if the constituency is slightly curdled.

  6. Add flour, Bicarb of soda, sugar and salt.

  7. Fold in until a smooth cake batter is formed.

  8. Pour into greased loaf tin and bake for 20-30 mins, or until a knife can be pulled clean from the centre of the loaf.
