Tasty banana bread, for using up old bananas, or having an almost guilt-free treat.
| 2 | tbspn margarine |
| 1 | tbspn milk |
| 2 | medium bananas |
| 1 | whole egg |
| 1 1/2 | cup brown flour |
| 1/2 | tsp bicarbonate of soda |
| 1/2 | cup caster sugar |
| 1/4 | tsp salt |
- Set oven to 160 deg, gas mark 5.
- Melt margarine and add to a large mixing bowl.
- Mash the bananas until smooth.
- Add milk, mashed bananas, egg and optional walnuts.
- Mix together thoroughly, it's ok if the constituency is slightly curdled.
- Add flour, Bicarb of soda, sugar and salt.
- Fold in until a smooth cake batter is formed.
- Pour into greased loaf tin and bake for 20-30 mins, or until a knife can be pulled clean from the centre of the loaf.
