Coconut pyramids, very nice but moreish
| 2 | eggs |
| 4 | oz caster sugar |
| 1/4 | cup lemon juice |
| 8 | oz desiccated coconut |
- Beat the eggs and sgar until creamy.
- Stir in the lemon juice, rind and coconut.
- Form into pyramids using an egg cup moistened inside with cold water to prevent sticking.
- Bake at 190C fan oven for 18-20 minutes, until tinged with golden brown. Don't overcook!
