Jewish Coconut Pyramids Recipe

Coconut pyramids, very nice but moreish

Ingredients
2 eggs
4 oz caster sugar
1/4 cup lemon juice
8 oz desiccated coconut
Directions
  1. Beat the eggs and sgar until creamy.

  2. Stir in the lemon juice, rind and coconut.

  3. Form into pyramids using an egg cup moistened inside with cold water to prevent sticking.

  4. Bake at 190C fan oven for 18-20 minutes, until tinged with golden brown. Don't overcook!
