Home made oatmeal pancakes. Great start to the day!

Ingredients
| 1 |
cup pecans |
| 2 |
bananas |
| 2 |
cups oatmeal |
| 3 |
cups whole wheat flour |
| 1 |
golden delicious apple |
| 3 |
eggs |
| 3 |
cups 1% milk |
| 2 |
tbsp baking powder |
| 2 |
tbsp vegetable oil |
| 1 |
tbsp vanilla |
| 2 |
tbsp cinnamon |
| 3/4 |
cup ricotta cheese |
Directions
- Chop pecans in food processor, add oatmeal, flour and remaining dry ingedients and mix. Pour into large mixing bowl.
- Core the apple and chop in food processor. Add banana, eggs, oil, milk, ricotta cheese, vanilla, vegetable oil and cinnamon. Fold into dry ingedients.
- Cook in frying pan. Spread mixture in pan to make one pancake.
- Cook on medium until golden brown. Flip and continue other side.
