Ginger Chicken & Yams Recipe

Ginger chicken & yams

Ingredients
2 tbsps olive oil
1 lb yams
1 small red onion
1 lb chicken breasts
2 tbsps minced fresh ginger
1/3 cup minced green onions

Cooking Sauce:
3 tbsps soy sauce
3 tbsps dry cooking sherry
3 tbsps water
1 tbsps firmly packed brown sugar
1 1/2 tsps cornstarch
Directions
  1. In a 10-12 in frying pan or wok over medium heat, add 1 tbsp oil, yam sticks, and red onions

  2. Stirring often, cook veggies until just tender to bite, about 5 minutes

  3. Spoon onto a platter; loosely cover, and keep warm

  4. Turn heat to high and add remaining tbsp oil

  5. When hot, add chicken and ginger

  6. Stir fry chicken until no longer pink in center, about 4 minutes

  7. Add vegetables, soy sauce, sherry, water, brown sugar, and cornstarch.

  8. Stir until sauce boils

  9. Add green onion and return mixture to platter
