These are amazingly healthy - for even healthier diabetic friendlier cookies you can use Agave instead of the sugars listed.

Ingredients
| 1 |
cup flax, meal |
| 1/3 |
cup brown sugar, firmly packed |
| 1/2 |
cup Granulated sugar |
| 1/3 |
cup egg whites, or 2 eggs |
| 1/3 |
cup soy milk |
| 1 |
tsp vanilla extract |
| 1 |
cup whole wheat flour |
| 1 |
tsp baking soda |
| 1 |
tsp ground cinnamon |
| 1 |
pinch of salt |
| 3 |
cup Oats, uncooked |
| 1/2 |
cup raisins |
| 1/2 |
cup chocolate chips (milk chocolate if you want it extra sweet) |
Directions
- Heat oven to 350 F
- Mix sugars and flax.
- Add eggs, soy milk and vanilla; beat well.
- Add combined flour, baking soda, cinnamon and salt; mix well.
- Stir in oats, chocolate chips and raisins; mix well.
- Drop by rounded tablespoonfuls (or large teaspoonfuls if you want smaller cookies) onto un-greased cookie sheet (I like lining the cookie sheet with aluminum foil).
- Bake l0 to l2 minutes or until light golden brown.
- Cool l minute on cookie sheet
- Remove to wire rack. Cool completely.
- Yields about 2 to 4 dozen cookies depending on how big/small you make them.
