Light side dish; great for summer!
| 2 1/4 | cups canned vegetable broth |
| 10 | oz. couscous |
| 1 | cup chopped green onions |
| 2 | cups sliced tomatoes (cherry or grape) |
| 1/2 | cup thinly sliced fresh basil |
| 1/4 | cup olive oil |
| 1/4 | cup balsamic vinegar |
| 1/4 | teaspoon dried crushed red pepper |
- Bring broth to boil in medium saucepan. Add couscous. Remove from heat. Cover; let stand 5 minutes. Transfer to large bowl. Fluff with fork. Cool.
- Mix all ingredients. Season with salt & pepper. (Can be made 1 day ahead. Chill.)
