| 72 | g breadcrumbs, wholewheat |
| 110 | g spinach, thawed, drained and chopped (drained weight) |
| 572 | g ground chicken |
| 1 | large egg white |
| 1/4 | teaspoon salt |
| 1/4 | teaspoon ground pepper |
- If you don't have breadcrumbs on hand, simply whiz the heels from a loaf of bread in a food processor to ake crumbs.
- Mix ingredients in a large bowl, draining spinach as you add it, careful not to overmix.
- Form meatballs using 1 heaping tablespoon of mixture for each.
- Bake at 400F for 12 minutes, or until cooked through and firm to the touch. (OR fry in a large skillet coated with cooking spray until done.) Makes 30 meatballs. :)
