E's Chicken and Spinach Meatballs Recipe

Adapted from Julie VR's spinach meatballs: http://dinnerwithjulie.com/2008/05/02/day-123-fusilli-with-spinach-meatballs/ Calorie info is per meatball.

Ingredients
72 g breadcrumbs, wholewheat
110 g spinach, thawed, drained and chopped (drained weight)
572 g ground chicken
1 large egg white
1/4 teaspoon salt
1/4 teaspoon ground pepper
Directions
  1. If you don't have breadcrumbs on hand, simply whiz the heels from a loaf of bread in a food processor to ake crumbs.

  2. Mix ingredients in a large bowl, draining spinach as you add it, careful not to overmix.

  3. Form meatballs using 1 heaping tablespoon of mixture for each.

  4. Bake at 400F for 12 minutes, or until cooked through and firm to the touch. (OR fry in a large skillet coated with cooking spray until done.) Makes 30 meatballs. :)
