Vegan Chocolate Truffle Pie Recipe

From everydaydish.tv This is delicious, and very easy. You absolutely cannot tell that it's non-dairy. In fact it tastes like it could've come from Baker Square. I set it to nine servings, but it's so rich, I actually eat an 18th as a serving.

Ingredients
6 slices mori nu lite silken firm tofu
10 ounces dark chocolate
1 cup powdered sugar
1/4 cup chocolate soy milk
2 teaspoons vanilla extract
1 chocolate cookie crumb pie crust
Directions
  1. If your dark chocolate is in bar form, break it into chunks. Melt chocolate in microwave at 10 second intervals, stirring in between.

  2. Put tofu in blender and blend until smooth.

  3. Add melted chocolate and blend again, until smooth.

  4. Add powdered sugar, chocolate soy milk and vanilla and blend until mixture is smooth and fluffy.

  5. Spread chocolate mixture into pie crust (make sure crust is vegan. if vegan crust is not available locally, make one yourself with Newman Os, vegan oreo knock-offs) and top with crushed chocolate cookies or chocolate curls.
