Oven-Fried Onion Rings Recipe

From the American Diabetes Association. Light and tasty treats particularly sweet with Vidalia onions, but they are good with whatever is available. Vidalia onion, corn oil, cornmeal, fine bread crumbs, Parmesan cheese, paprika, cvt

Ingredients
1 large onion (Vidalia), thinly sliced
1 tbsp corn oil
2 tbsp cornmeal
2 tbsp bread crumbs, crushed fine
1 tbsp Parmesan cheese
1/8 tsp paprika
Directions
  1. Peel onion; slice into 1/4 inch rings.

  2. Sprinkle with oil and toss to coat.

  3. Mix dry ingredients, sprinkle over onion rings, and toss to coat evenly.

  4. Place on a nonstick baking sheet. Bake at 400 degrees for 20 minutes or until lightly browned.
