| 1 | bunch broccoli |
| 1 | cup bamboo shoots |
| 1/4 | cup canola oil |
| 2 | tbsp sesame oil |
| 2 | tbsp rice wine vinegar |
| 2 | tbsp soy sauce |
| 2 | tbsp brown sugar |
- POACH CHICKEN BREASTS WITH SOME BLACK PEPPERCORNS AND BAY LEAF IN WATER UNTIL DONE, ABOUT 20 MINUTES. REMOVE FROM POT, COOL AND CUT-UP INTO PIECES.
- BOIL PASTA,DRAIN AND ALLOW TO COOL.
- PEEL AND THINLY SLICE CARROTS ON A BIAS.
- CUT BROCCOLI INTO BITE-SIZE PIECES.
- FINELY CHOP GREEN ONIONS.
- MINCE GARLIC.
- IN A LARGE BOWL, COMBINE RICE WINE VINEGAR, SOY SAUCE AND BROWN SUGAR. WHISK TOGETHER UNTIL SUGAR IS DISSOLVED. THEN ADD OILS.
- ADD OTHER INGREDIENTS INTO BOWL WITH DRESSING.
- CHILL AND SERVE.
