Oriental Express Beef Lettuce Wraps

Makes 6 servings

Fast and easy to prepare. Use 95% lean ground beef. Serves 6 (3/4 cup or 2 wraps per serving)

Ingredients
1 lb. lean ground beef
1/2 cup Hoisin sauce
1/2 cup Peanut sauce
1 medium cucumber
1/2 cup shredded carrots
1/4 cup mint leaves
1 tsp. black pepper
2 heads of boston lettuce
Directions
  1. In a large non stick skillet cook the beef over medium heat. With a spoon, crumble the beef as it cooks. Cook 8-10 minutes, or until beef is completely brown.

  2. Stir in Hoisin sauce and the peanut sauce. Continue cooking until the mixture is heated through.

  3. Just before serving, add the cucumber, carrots, and torn mint leaves. Toss gently, and season with pepper.

  4. To serve, wrap 3/4 cup of the beef mixture in a lettuce leaf. Continue for all twelve leaves.

  5. Garnish with fresh mint.
