From About.com, this recipe is a lovely baked boneless chcken breast coated with a tasty crust. Also nice the next day sliced up on salad!
| 1/4 | cup apple juice |
| 1/2 | cup Dijon mustard |
| 2 | cloves garlic, minced |
| 1 | cup bread crumbs |
| 1 | cup grated Parmesan cheese |
| 1 | tbsp olive oil |
| 1/4 | tsp salt |
| 1/8 | tsp pepper |
| 8 | chicken breast |
- Heat oven to 375 degrees and line 13x9 pan with foil.
- Combine juice,mustard and garlic in bowl or shallow pan.
- Combine breadcrumbs,cheese, oil, and seasonings in a different bowl or shallow pan.
- Take each chicken breast, coat with mustard mixture until coated, then roll in breadcrumb mixture until throughly coated. Place in foil covered pan.
- Bake for 20-30 minutes or until golden brown and cooked through.
