Parmesean Chicken Recipe

From About.com, this recipe is a lovely baked boneless chcken breast coated with a tasty crust. Also nice the next day sliced up on salad!

Ingredients
1/4 cup apple juice
1/2 cup Dijon mustard
2 cloves garlic, minced
1 cup bread crumbs
1 cup grated Parmesan cheese
1 tbsp olive oil
1/4 tsp salt
1/8 tsp pepper
8 chicken breast
Directions
  1. Heat oven to 375 degrees and line 13x9 pan with foil.

  2. Combine juice,mustard and garlic in bowl or shallow pan.

  3. Combine breadcrumbs,cheese, oil, and seasonings in a different bowl or shallow pan.

  4. Take each chicken breast, coat with mustard mixture until coated, then roll in breadcrumb mixture until throughly coated. Place in foil covered pan.

  5. Bake for 20-30 minutes or until golden brown and cooked through.
