Chicken Burritos Recipe

Tasty chicken burritos.

Ingredients
14 ozs canned diced tomatoes
3 green onions
1 avocado
1 lb boneless, skinless chicken breast
2 tsps bottled minced garlic
4 ozs canned diced green chiles
6 flour tortillas
16 ozs refried beans
3/4 cup monterey jack cheese, shredded
6 lettuce leaves
Directions
  1. Place chicken, garlic, and chilies with their juice in a 2-quart microwave-safe dish. Cover and microwave on high for 6 minues, then let the breasts rest for 5 more minutes.

  2. Meanwhile, heat refried beans in the microwave. Spread each tortilla with about 1/4 cup refried beans, then sprinkle with 2 tablespoons cheese.

  3. Make the Avocado Salsa and set aside. Rinse and drain the lettuce (if using), pat it dry, then shred the leaves. When the chicken is done, shred the meat by using 2 forks to pull it apart. Stir well to mix in the garlic and chilies.

  4. Place a tortilla on each serving plate. Top each with about 1/3 cup chicken, shredded lettuce, and a heaping 1/4 cup salsa and serve.

  5. Avocado Salsa -- Pour the tomatos with their juice into a 2-quart or larger bowl. Slice the scallions with enough of the tender green tops to make 1/4 cup and add them to the bowl.

  6. Cut the unpeeled avocado in half lengthwise and in half again through the width to make quarters. Remove the pit, slide off the peel, and cut the avocado into 1/4-inch dice, adding it to the bowl as you cut. Stir to mix and serve at once.
