Oriental Express Chicken Lettuce Wraps Recipe

Makes 12 servings or 2 wraps per serving for a total of 24 wraps.

Ingredients
1 lb. boneless skinless chicken breast
1/3 cup Hoisin Sauce
1/3 cup Peanut Sauce
1 medium cucumber
1/2 cup shredded carrots
1/4 cup cilantro
1 tablespoon chopped fresh garlic
1 tablespoon chopped fresh ginger
1 medium red bell pepper
8 oz. sliced water chestnuts
8 oz. fresh baby spinach
1/2 cup zucchini
1 tsp. Black Pepper
2 heads of green leaf lettuce
Directions
  1. Prepare the chicken breast by slicing into strips.

  2. In a large non-stick skillet cook the chicken over medium heat with the chopped garlic and chopped ginger (You can add a little water to saute the chicken). Stir in the hoisen sauce and peanut sauce. Continue cooking until the mixture is heated through. Prepare the vegetables (except the lettuce leaves) by slicing them into strips. Just before serving, add the vegetables, except the lettuce. Toss gently and season with black pepper. To serve, wrap 3/4 cup of the mixture in a lettuce leaf. Continue for all 24 leaves. Garnish with fresh cilantro leaves.
