Ingredients

cup Extra Virgin Olive Oil |

tbsp vinegar (red wine) |

tablespoons mustard (spicy brown) |

tablespoons honey |

teaspoon dried oregano |
| 1/2 |
teaspoon garlic powder |

ounces penne (whole wheat) |
| 2 |
cups baby spinach |
| 2 |
tomatos (plum) |
| 1 1/2 |
cups frozen peas |
Directions
- Cook pasta according to the directions on the box
- wiske together oil, vinegar, mustard, oregano, garlic powder and honey (set aside)
- thaw peas in a colander under hot water
- tear spinach
- Slice tomatos into large chunks
- put pasta, peas, tomatos, and spinach in a large bowl
- pour dressing over the top and toss
- *adding 1/2 cup pistacios gives an added crunch
