Pasta Salad Florentine

Makes 4 servings

Pasta salad- high calories, low sodium

Ingredients
1/4 cup Extra Virgin Olive Oil
3 tbsp vinegar (red wine)
2 tablespoons mustard (spicy brown)
2 tablespoons honey
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
6 ounces penne (whole wheat)
2 cups baby spinach
2 tomatos (plum)
1 1/2 cups frozen peas
Directions
  1. Cook pasta according to the directions on the box

  2. wiske together oil, vinegar, mustard, oregano, garlic powder and honey (set aside)

  3. thaw peas in a colander under hot water

  4. tear spinach

  5. Slice tomatos into large chunks

  6. put pasta, peas, tomatos, and spinach in a large bowl

  7. pour dressing over the top and toss

  8. *adding 1/2 cup pistacios gives an added crunch
