Simple rice and chicken recipe the whole family will like.
| 1 | cup basmati rice |
| 2 | cups chicken broth |
| 2 | cups chicken, thighs, meat only cut into bite size cubes |
| 1/2 | tsp salt |
| 1 | dash ground black pepper |
| 1 | diced small onion |
| 3 | clove garlic minced |
| 1 | diced green pepper |
| 1 | cooking spray (Olive Oil) |
Brown the chicken seasoned with salt and pepper in a frying pan sprayed with olive oil. Add green pepper, garlic and onion and saute until transparent. Add rice and slightly toast. Add chicken broth, bring to a boil, reduce heat and simmer until broth is absorbed and rice is done (about 25 to 30 minutes.)Categories
