Steak Fajitas Recipe

Steak Fajitas topped with sour cream. Serve with guacamole.

Ingredients
8 tortillas (low carb mission)
1 lb flank steak
38 grams lime juice (juice of 1 lime)
3 tbsp lard
8 tbsp sour cream
1 onion
1 red pepper
1 green pepper
Directions
  1. Cut flank steak across grain into thin strips. Place in container, squeeze lime juice over steak, cover and refrigerate for 20-40 minutes.

  2. Cut onion and peppers into strips.

  3. Heat empty large cast iron pan over high heat until hot. Add 1 tbsp lard and wait for it to melt. Make sure bottom of pan is coated, then add 1/2 steak. Stir fry until browned, then remove from heat and stir fry second batch. Remove from heat when browned.

  4. Add 2 tbsp lard to pan. When it melts add peppers. Stir fry for 3 minutes and add onion. Stir fry until vegetables are browned and soft. Return steak to pan and toss until hot.

  5. Serve in warmed tortillas with 1 tbsp sour cream in each tortilla.
