Simple Red Beans and Rice Recipe

A cheap and easy take on a Southern classic

Ingredients
2 3/4 cups water
1 cup brown rice
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 3/4 cup red kidney beans, drained
1 tablespoon hot sauce
Directions
  1. Bring water to a boil in a small saucepan. Add rice, cover and simmer 45-50 minutes, stirring occasionally. When rice is done, remove it from the stove top.

  2. To a medium skillet over medium high heat add oil and onions and cook 3 minutes to soften.

  3. Add beans to heat through, then stir in cooked rice.

  4. Season rice and beans with hot sauce, salt and pepper, to your taste. Serve rice and beans from the skillet.
