Reheats very well, great lunch item.
| 8 | eggs |
| 1/3 | c ground flaxseed |
| 1/2 | c feta cheese |
| 2 | stalks broccoli, chopped |
| 2 | c spinach, chopped |
| 1 | onion, chopped |
| 2 | c mushrooms, sliced |
| 1/8 | head cabbage, shredded |
| 1 | carrot, shredded |
- Mix eggs, flaxseed, and feta. Set aside.
- Pre-heat oven to 375. Heat cast-iron frying pan sprayed with nonstick spray. Saute veggies until crisp-tender. Pour egg mixture over top and place entire pan in oven. Bake until set firmly.
